The Rock School of Dance Education in Philadelphia Partners with Parkhurst

Philadelphia,PA, March 2012 -- – Parkhurst Dining Services was recently selected by The Rock School for Dance Education in Philadelphia, offering a comprehensive dance program in classical ballet and a challenging academics program, as the first contract food service provider to serve exceptional and personalized culinary experiences that will enhance student life for grades 7-12.

Since dining is an important amenity at The Rock School for Dance Education, the selection process focused on a dining services partner that valued health, nutrition and creativity. “Our primary reason to outsource dining services was to streamline our dining procedures, while improving the quality of healthier foods and service of our café. We selected Parkhurst for their management expertise and the opportunity for our staff to interact and train with other chefs throughout the Parkhurst organization,” said Brian McCole, Rock School assistant director.

Food is prepared by Parkhurst executive chefs from scratch using local agriculture sourced through Parkhurst’s FarmSource™, a sustainable sourcing program. Through FarmSource™, the company purchases $23 million (a $5 million increase over last year’s local spend) in local foods from farmers and producers of food we support within a 125-mile radius, which greatly reduces the distance food travels from harvest to table.

Parkhurst chefs will prepare menu items towards the athlete/dancer with an emphasis on healthy foods that are low in fat and high in protein including soups made from stocks and recipes with more fruits, legumes, whole grains and lean proteins.

“One of our goals is to enhance the school’s menu with healthy and appealing options so that students are encouraged to eat healthier, while having the opportunity to indulge in a burger every once in a while,” said Pat Santostefano, Parkhurst director of partnership development. “The Rock School also holds several special events and fundraisers, so we are excited to build their catering business with the support of our dining teams at neighboring schools we provide dining for. Students, staff and guests can expect a fresh and healthy dining program with many different options to select from daily.”

Parkhurst specializes in small to mid-size schools and provides dining at several area Philadelphia higher-education institutions including: Philadelphia University, The University of the Arts, Arcadia University, Rosemont College, Gwynedd-Mercy College, Delaware Valley College and the Curtis Institute of Music.
