Parkhurst Chefs, Chatham Students, Compete in School's First Epic Chef Battle

WHAT: Chatham University students enrolled in the school's food studies program will "don" their chef coats to compete against Parkhurst Dining Executive Chef Dan Dooley in the school's first "EPIC" Chef Battle. Based on the Food Network's popular "Iron Chef" show, each team will have one hour to prepare a sustainable lunch featuring soup and a main entree using a basket of fresh, local ingredients from Penn's Corner Farm Alliance in Pittsburgh.

Chef Dan has prepared meals for the Ambassadors of India, Brazil and Vietnam while serving Chatham. Chef Dan also incorporates local foods into our menus for the students at Chatham every day. At the University's new campus at Eden Hall, Chef Dan prepares many of his catering menus using local and sustainably grown foods from Western Pa., as well as from the Chatham campus. Chef Dan purchases shares of honey from apiaries installed at Eden Hall. He uses the honey to prepare baked goods like baklava, as a marinade for grilling chicken and even incorporates the fresh variety of herbs like basil, chives and oregano grown in the campus greenhouse to make a honey Dijon vinaigrette .

An impressive panel of judges includes Esther Barazzone, president of Chatham University; Chris Fennimore, WQED (PBS) TV cooking show host; and Larry Lagatutta, owner of Enrico Biscotti. The judges will award "5" points in each category – appearance, taste and creativity.
